You can do it in game (with the audio options) but it is fiddly. If you want to do it on the fly, you need either the chat pad or the audio controller. The chat pad has two buttons on the left - one looks like a human silhouette and the other looks like a controller. If you want more chat, hit the dude. If you want more game, hit the controller.
