I don't use my heel at all, just brake with the very left edge of my foot and roll it over to blip the throttle while braking

The Piloti shoes help a lot.

That was the only way I was able to even get close to doing it on track. I bet if I had a wider gas pedal there would be no issue. But I wasn't comfortable thinking about my foot slipping off under heavy braking. Without shoes I can get the ball of my foot on the brake and have just enough space to get my heel over. I definitely am better at getting the revs matched right doing it the "traditional" way.
