WSUS/Group Policy is great if I had a Windows DC... we're running Samba though and I haven't figured out an open source alternative yet. We're just now getting an OpenLDAP setup instead of using PAM authentication.
Do you have a list of all of your workstations? (not sure how many people you have).

You can easily just disable the windows update service with a script using SC.exe or any other kind of remote service stop tool.

If you have SC.exe and a list of workstations, just wrap a simple batch file around it (see below)...

OIT
set mchname=%1
sc \\%mchname% stop wuauserv

You can get fancier by checking the state, etc. but you get the drift.
