You can certainly find used parts...used tops, used seats and save a considerable amount. But insurance companies look at replacement values...so they'll base it off "new" parts...they have that responsibility because typically the car is collateral to a bank for the loan...
Granted, this '02 is likely paid off...but the insurance companies still follow the same MO.

Well...there you go...so most likely you'll have little to tell the insurance company in the way they fix it. They'll be responsible for restoring the investment (since it's collateral on a loan). So, once they figure the costs on replacement parts and labor, they'll likely total it out.
I've seen this same thing happen many, many times. It sucks.
At the very least, you'll be able to search for another S2000. 
Also...check on how much it would be to purchase it back (but it will bear a salvage title)...but that's no matter to you...as you know the only things wrong with it...many times you can buy a car like yours back from the insurance company for $6k~ and then part it out...the engine alone is worth $3k, tranny...another $2k...various parts, etc...makes up much of the difference.

Insurance companies are allowed to replace seats with stock seats of "like" condition, i.e. from salvage yards. Ask me how I know. In 2004/2005 that allowance was approximately $2000-$2500.

I do agree that safety is not to be compromised.Also, seats from a salvage do not necessarily constitute damaged goods. Honda does not sell seats as whole seats, but as parts. I have yet to see or hear of anyone receiving credit for the whole lot of parts and labor.
