That is rather odd. Most chefs hit the fishes head so it's no longer conscious. I guess their selling point is the fact that it's as fresh as fresh can be.

he knocked it unconscious... but ... then he didn't kill it. and it woke up. that was really disturbing after it started moving @2:30ish...

well damn, that's some fresh fish...but i felt bad for it when it was still conscious at 2:30 with half it's body ripped away.
