You can partially protect yourself in a few ways...
My American Express Blue card supposedly has a 100% online fraud guarantee.
My Visa Platinum gets me mileage and a free "double the manufacturers warranty" program so I tend to use that one. Of course that's the one that got hacked.
Honestly - I don't think there is a way you'll ever be totally protected.
Crooks are pretty clever - the fake ATMs/ gasoline pump card readers are a prime example.

I'de also recommend you contact a few of the big credit reporting agencies (call your bank for their #'s), and put a "Credit Fraud Alert" on your credit-report.
In the alert, indicate you request to be contacted at "555-5555" or whatever before credit is approved.
This way, if this person is trying to buy something (god forbid a bank-loan or a car, etc..) the creditors 'should' contact you via the phone before allowing it to go through.
