Kirk Hammett - Metallica
Dave Mustaine - Megadeth/Metallica
Randy Rhodes - Ozzy
Mikael Akerfeldt - Opeth
Joe Satriani - he's played with everybody at somepoint...
Andy Mckee - acoustic
Don Ross - acoustic
Those are my best/favs off the top of my head

marty friedman/jason becker combo is pretty good. then of course guitarists from the bands i like: opeth (all...especially still life!), soilwork (all from predator's portrait), in flames (early-/mid-career harmonies and solos), dark tranquillity (style).

and still no one has mentioned buckethead....
I think that buckethead has the technical ability that most of the virtuosos have and more style than most of them. Obviously that is preference though. (Flame suit on) John Mayer has some sick blues chops when he takes off his Pop Star costume. I also love Leo Kottke for acoustic talent and arrangement.
These are all mostly emotional favorites more so than technical favorites. I personally feel it is much easier to play technically than emotionally. Not that I really disagree with anyone on this list (except I don't much care for Kirk).

Well buckethead has so many different styles that it depends on what you like.
Honestly I like a lot of the videos you can find just from google. Type in buckethead on the video search and it returns pages of results, mostly live.
