Have you turned on the TV to watch the food network today? OMG my turkey sure won't taste like that tonight. Elton Brown was saying coating the turkey over and over won't do sh!t. What you need to do is brine the turkey. What you do is get all the salt out of the turkey first by using osmosis. If we remember our hs chemistry, once @ equilibrium, the turkey and outside liquid isn't just sitting there with equal salinity. It is in a continuous flow, so the outside liquid actually goes into the turkey, unlike basting. What should you use as the liquid? Vegetable broth (salted), a lot of kosher salt, n a whole bunch of other stuff. For more info, visit www.foodnetwork.com
