I work at Northrop Grumman and right ouside my office is the production line where f-18's are being put together everyday... that's probably the closest i'd ever get to actually being inside one

Nice clip. I flew the F4C Phantom in the AF. The most fun I've ever had in my life, bar none. My screen name is for the F22 Raptor, the next generation stealth and air superiority fighter. It has thrust vectoring -- variable pitch turbine exhaust nozzles. It can turn on a dime and pull away from an F15 on full afterburners. I want a ride on that!

Nice.

I sometimes wonder about the freedom some of these pilots have with these planes, I mean, it's the governments plane right? How much time do these pilots have to fly however, or wherever they want?

I'm a military helicopter pilot - in terms of taking stuff for rides, each sqn is given a YFR - or Yearly Flying Requirement -

Basically a budget. Sure, its fun to screw around once in a while, but you have many, many sequences that you must remain current on.
