Is the person "normal" as in are they able to participate in normal activities? Then I would probably take a lot of time off from work, and travel to a lot of different places with them.
If the person is bed is tied to a bed, then simply sitting by their bed 24/7 would be really depressing, and would probably do more harm to both people. In this case I would probably visit 2-3 times a week and maybe spend a couple of hours with them each visit.

If they are not bed ridden but at least have limited mobility, a cruise is a good option. They cater to people who are really old and can't do much. A friend's father was in fairly ill health and he took him on a cruise. He said it was one of the best things he ever did in his life and one of the best times he had with his father, who passed away months later.
