If you are staying in Paris, IMO, you must consider:
1. Location
2. Location
3. Location
There were plenty of hotels I wanted to stay in but they were all booked. When are you leaving again? If it's summer, you might have a problem finding rooms.
I stayed at the Hotel De Suez. Great location, room was small, but not as small as some of the other rooms I stayed in Europe. The place was clean, staff was friendly, and the location was great. There were metros within 5 mins walking distance (well, there are metros everywhere in Paris), and the Notre Dame Cathedral was a short 10 min walk away. The Seine River was 10 mins away as well. Most of the touristy sites are on the Seine. The Luxemburg gardens were very close as well.
If you have any further questions about Paris, let me know. I absolutely love Paris and was there a month ago for 5 days.

Tripadvisor is a great site btw. Their forums offer some advice as well.

I'm back, I'll share my thoughts. Hotel Mayet was very nice. Very small rooms, no AC (didn't need it) and a view of a brick wall but it was clean, cute and the staff was friendly and nice. The location was excellent (walking distance to Montparnasse in 6E). Paris was nice but it was very expensive. The right bank was no where near as nice as the left, the Latin Quarter was a complete waste of time and space. All the tourist spots are littered with gypsies begging for money. Don't give them any or they'll ask for more. If a middle eastern looking girl in a long shirt and no shoes asks you if you speak English shake your head and act confused.
The best way to eat is to find a Patisserie/bakery/pastry shop and buy a sandwich. They are awesome and reasonably priced. Caf
