be amicable and be fair. I dont think the knife set has much "family" rememberance value. The duplicates of the collectibles would be a nice thing to give to her...who collected the houses and for how long?
well the duplicates were collected so my brothers and i would each have some. he had been collecting them for well over 30 years

as per knife set....clearly no sentimental value...its more practical as my brother (18) is a cook by profession and has better ways to drop a grand than buy some more knives

Sit her down, and talk some sense. If she is not agreeing, sue her. It will be an instant win, as all belongings will be awarded to you (his only kin). Girlfriends are not considered heirs.

Maybe for the knife set you could negotiate with her? Family members or your brother could offer to replace the knife set (with something obviously less cheaper). Although it will be tough, going the diplomatic route will likely be more successful than being antagonistic (ie threatening legal action).

IMO, That's the risk she runs in just being a girlfriend. She obviously got some benefit from the relationship. The stuff is yours baring any common law marriage crappola.
