Have some frites. If you are there in late May early June and like sushi try groene haring (fresh herring). Go to the Rijksmuseum, Van Gogh museum. Touristy but the canal boat tour can be fun. Anne Frank House is touristy but moving. Red light district for "window shopping". Rent a bike. If you're into flowers and it is spring Keukenhof is beautiful. Coffee shops . . . much, much more. (BTW, I lived in the Hague for 4 years)

If you are there in the summer, don't miss the outdoor screenings of classic films that the Nederlands Filmmuseum puts on in Vondelpark. Take a trolley ride around town - it is a great way to sightsee. The Van Gogh museum is a must-see, and the Riiksmuseum is chock-full of Rembrants, Vermeers and similar stuff, if you are an art maven.

The Heineken Factory is definitely fun, but you only get 3 beers per tour now(July '07), plus a cool souvenir!

Amsterdam is crazy! I felt like I was on another planet. Hotels are shite and expensive, like someone else mentioned. But it's a beautiful city with lots of character.

I had dinner in a restaurant that was located in the oldest building in town. It was a castle, and it was completely candlelit, keeping with the medieval ambiance.

Also, coffeeshops. But if you do that all day, you might not see or remember too much else. And the red light district.
