Super Bowl is coming up...
I have an annual gig for about 12 people I need to feed.
Usually get out the deep fryer and make some buffalo wings, french fries, beignets. A crock pot full of some super spicey chili or something and so forth.
Going to mix it up this year and do some other things. Thai lettuce cups with chicken and spicey peanut sauce. Kalua pork pot stickers and this one from Guy Fieri:

Jambalaya Sandwich. Trust me, its awesome. Bacon, pork loin, andouille, smoked sausage, chicken, and lots of spices. I like to alter a little with chicken breast instead of thighs, smoked turkey sausage instead of pork, and pork loin instead of pork butt roast. Find a good andouille and sour dough (trader joe's) and it makes and unreal sandwich.

50/50 mix of orange and pineapple juice with a health shot of malibu and grand marnier (or triple sec). Add ice and float a healthy shot of dark rum (preferably Appleton Estate) by pouring slowly over the ice cubes so it stays on top layer over juice. Garnish with Pineapple slice, and cherries on frufie umbrella.
I can use a very good and very spicey bloody mary recipe if you make a good one.

Brown a mix of 2 parts hamburger, one part pork in a pan with some diced onion.
Bake a couple of bags of tater tots.
Place tater tots on bottom of casserole, cover with meat, and cream of mushroom soup mix (straight from the can). Continue to layer.
Top with an assload of cheese.
Bake at ~400 for about 20-30 minutes.
A million calories per cubic inch.

nice directionsI personally hate football but I love the parties because of the awesome food.
Last time I hosted a Super Bowl I made some green chile sour cream dip with chips and also a spicey roasted tomato chipotle dip. They came in packages and you just had to add either sour cream to one and chopped canned tomatoes for the other.

This is an all-time favorite in my family. I make it about 20 times a year for various parties. Make it a few days in advance to allow for the flavors to merge.
Barefoot Contessa's Pan Fried Onion Dip.

Ingredients
2 large yellow onions
4 tablespoons unsalted butter
1/4 cup vegetable oil
1/4 teaspoon ground cayenne pepper
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 ounces cream cheese, at room temperature
1/2 cup sour cream
1/2 cup good mayonnaise
Directions
Cut the onions in half and then slice them into 1/8-inch thick half-rounds. (You will have about 3 cups of onions.) Heat the butter and oil in a large saute pan over medium heat. Add the onions, cayenne, salt, and pepper and saute for 10 minutes. Reduce the heat to medium-low and cook, stirring occasionally, for 20 more minutes until the onions are browned and caramelized. Allow the onions to cool.
Place the cream cheese, sour cream and mayonnaise in the bowl of an electric mixer fitted with the paddle attachment and beat until smooth. Add the onions and mix well. Taste for seasonings. Serve at room temperature.
