Fire him and take him to court for the return of the money. That is simply outrageous.
If the credit card machines shows sales of a certain amount, how could you not notice that the register and the credit cards didn't match up at the end of the day?
I'm sure your register will divide up the sales via category when you batch out.
Cash sales, Charge 1 sales, Charge 2 sales....etc..

You should put your goddamn foot in his ass. Then call the police. Imagine the other crap this guy must have pulled over the past few years. . . is anything missing from the house? From neighbor's houses? Seriously, if someone would steal from family, I can't imagine what else he would do.
