I've always wondered this as well. From what I've seen, organic & free range tend to be brown with a stronger shell and generally don't taste as good IMO. Why? I dunno.

Breed of chicken. What they eat also influences color. We buy eggs from a lady who has chickens and we get green shells, brown shells, white shells, some even have a reddish color to the shell. She has several different breeds of chickens, but one thing in common her hen's eggs are considerably larger than anything called a jumbo in the stores. Different birds have different colored eggs, and even within species there are variations in color.

Sometimes I get purple polka-dotted eggs that come out of a rabbit that makes chicken noises.

Not necessarily so. We can get brown eggs from chickens in non organic egg factory farms. They then seperate them from the white and sell them for more. They just can't certify that they are organic.
