Thinking the extra gasket just got "blown" out of the way.
It seemed to be more like halfway off. Feel free to duplicate the experiment on your own car and report the findings.

On my dads 84 Nissan p/u, I changed the oil (not on a slope), I didn't put the drain plug back on.
I did the same thing on my girlfriend's dad's Kia Sportage. Dumped a good quart on the driveway before I realized WTF I did. I found out a few days ago while changing the diff fluid on the S2000 that I've been driving around for the last year with two crush washers on the diff's drain plug. Apparently I remembered to install a new washer but forgot to remove the old one.

Well, I drove the car to work today and it didn't blow up. That's a good sign.

Did the same thing in my Aveo. It was dark when I put the oil filter on and I didn't see the gasket fall off. My car was idling while I cleaned up. There must have been 3 quarts on the ground before I found out.

Yes, I know. That's why it was a boneheaded move.

As long as I worked at my shop I've seen everyone do it once including me. Didn't double gasket, but no filter at all.
