The DIGIC III and 14 bit combined with the larger microlens on the sensor is going to greatly reduce noise and increase color rendition (ok I know it's based on specs and not results). This is basically what the Mark III does.
Also, Wireless/larger viewfinder/changeable screens/live preview w/focus/6.5 frames (75 jpeg buffer) in a prosumer/ AUTO ISO - YEAH/true spot meter/write when CF door open/ISO in viewfinder/..........the list goes on.
The 30D is STILL a great camera (hell so is the 20D) but this is a MAJOR upgrade.
What I really like seeing about this and the 1Ds Mark III is Canon "seems" to be realizing that pixel bump and a DIGIC increase isn't going to cut it anymore against Nikon/Pentax/Olympus/Sony.
I hope this is the start of the 70's/80's camera wars where every 9-12 months each manufacture was trying to "one-up" each other. This should also lead to FF camera being cheap and available from more manufactures.

Yes, there is quite a bit more than 2MP... 2MP which I already have in the Rebel XTi.

I'm gonna wait and see how this all plays out. Still loving my 30D, but I did give my father my Digital Rebel, so I feel like I need another camera as a backup for when I shoot tournaments. The more colors per channel I'm a little weary about. That sounds like one of those things that is a huge difference when you look at the statistics, but really doesn't make much of a difference when it comes to final image quality.
Ultimately I'm going to pick up another body this winter. Could be 40D, another 30D (probably not though, feel like mixing it up), 5D is a definitely contender, but I really have my eye on a 1DMIII. The MkII or MkIIN is definitely more camera than I need, but every time I read about the specs of the MkIII I accumulate a little bit of drool in the corner of my mouth.
Realistically though I have to solve my ultra telephoto deficiency before I get a second body. I keep scoping potn and FM for 400 5.6's for a good deal, if anyone sees anything or knows anybody feel free to shoot me a pm.
