so which is better thick or thin, isnt thinner better?... both oils were from inside
But was one kept in your trunk for a while before you poured it? The way an oil comes out of the bottle is dependent upon its temperature at the time. Like I said before, a 10W30 oil "should" be exactly the same viscosity regardless of brand. If all conditions were the same and one was thicker than the other, something is not right. And no, thinner is not necessarily better.

Since mine burns only about a half litre between oil changes (synthetic every 5000km), I check it weekly.

How often do you change your oil?

Did you buy it at a dealership? They probably put in crap bulk oil. If it were me, I'd change it now and put in synthetic.

I haven't burned any measureable amount on my '04. I'm actually kind of nervous about that

Actually, at a Honda dealer, it is very likely that they'll have 5w30 and 5w20 "on tap" but the S2000 is the only Honda that usues 10W30 so there's a good chance it came from bottles. I guess its just a case of whether your dealer stocks cheap crappy 10W30 (Like mine used to until I bitched and moaned at the parts manager for 3 months straight)

Or if they have good 10W30... Like my dealership does.

I think having run low once, you're now a bit "gun shy". Just check it about the equivalent of every fuel up and you'll be fine. You won't see any difference checking it every day unless you change your daily habit and go for a long trip.
