Personally I'd go a 100W RMS per channel minimum for the amp.
Danger of overpowering would only be minimal and would almost have to be accidental.
There really is no such thing as too much power and you could even go larger. Be brave and go 150w RMS per channel and enjoy the ultra clean sound of power.

For me, having to hack the interior panels to fit the mid-range driver outweighs the possible sonic benefits of splitting the frequencies 3-ways. I think you'd be pretty happy with the sound of a nice 2-way component system.

As for the JL component speakers in general, have you listened to any of their lines locally? While a soundboard at a store is not ideal or fully representative of the sound in your car, you can get a sense of the relative sonic qualities of various brands and lines. Overall, the JL components are prone to have more extended highs, that some may find sharp or fatiguing. Others find them detailed.
