Default New System in the S2000 this wee, need advice ASAP

Planning on putting a system in my 2004 s2000 this week.

I have two amps, and I'm wondering if I need to use one (and which one) or both?

I want to avoid over/under powering the system. One benefit to using 1 amp is the space savings and cost savings ($100 labor per amp from my installers).

The potential amps I will be using are:

Precision Power PCX 480 (4 channels, 80 watts each)
*80x4 @ 4 Ohm 160 x 4 @ 2 Ohms 360x2 4 Ohms

Precision Power PCX 2200 (2 channels, 200 watts each)
* 200x2 @ 4 ohms, 400x2 @ 2 ohms or bridged 800x1 @ 4 ohms. ratings @ 12 volts & not 14.4 volts. a THD rate of only 0.02%

My speakers are going to be the Focal Polyglass 165 VR:

* 6-3/4" component speaker system (includes 2 woofers, 2 tweeters, 2 crossover networks)
* Polyglass woofer with butyl rubber surround and aluminum phase plug
* non-resonant zamak (zinc alloy) basket
* aluminum/magnesium inverted dome tweeter
* outboard crossover with 3-level tweeter control and midrange matching
* grilles included
* 6-75 watts RMS power range (150 watts peak)
* frequency response: 80-28,000 Hz
* sensitivity: 94.5 dB
* depth: 2-3/4"
* warranty: 1 year

I'm going to be using one Infinity Perfect Kappa 12.1 mounted in the trunkwell:

* 12" 4-ohm subwoofer
* aluminum cone with high-roll butyl-rubber surround
* massive cast-aluminum basket
* suitable for free-air use (handles up to 175 watts in free-air applications)
* power range: 75-350 watts RMS (1,400 watts peak power)
* frequency response: 18-200 Hz
* sensitivity: 96 dB
* top mount depth: 6-1/8"
* sealed box volume: 1.0 cu. ft.
* ported box volume: 1.75 cu. ft.
* Recommended Q-Logic Box Type: 1, 2, 3
* warranty: 3 years

I'm going to be using the Alpine CDA-105 with the PAC Steeringwheel adapter.
I'll also be dynamatting the passenger doors.

Anyone else have wisdom to offer prior to this system going into the car?

Yes. I've read these forms for hours before posting....

My previous sub/amp setup was:

The Precision Power PCX 2200 with TWO Infinity Perfect Kappa 12s

Is there ever a problem with running a sub at a certain wattage for years, then hooking it up in a new box with different wattage?

I've never quite understood the way the bridging/ohms/watts work.

What would I actually be pushing to the speakers/sub with your recommended setup 2big?
