Anything with a quick release on the bottom (can get it from a camera shop).
I've had a Sony digital-8 and a big-ass Canon GL-1. The biggest problem you will see is camera shake. While that is handled pretty well by the anti-shake in the camera, it's hell on the tape transport and sometimes you can see the brightness flutter slightly on the video.
Perhaps a better way would be to get a good quality camera, like a CCD and mount it up there and have the recorder strapped down somewhere.
Oh, and don't rely on batteries alone, a power inverter is your friend.
