So im going to be picking up a Supercharged S2K with an AEM EMS V1 soon. Are there an ways or techniques that i can check the diagnostics of the vehicle when i pick it up. Any abnormal readings that i should look for. Any and all help would be awesome.

Look at plugs. Download tune and see how smooth it is in fuel and ignition curves. Drive it. Then turn it off and try to warm start it.
