Maybe they don't like to be laid down? I thought they were a sealed gel or something of the sort?

No gel, I thought that until recently also, they use a Absorbed Glass Mat (AGM). They use traditional techniques of a lead acid but rather than leave the space between cells open they put in fiberglass the help prevent migration of the acid. They are also sealed so they can have a flexible mounting solution.

My car batt dies after a week or so.

Although I'm using a very small motorcycle battery, which isn't meant for cars, but it's working.

I am going to build a box for it this winter.

I wouldn't think so since the battery has upwards of 400 cranking amps

Yes, 100Amp is fine, using a breaker is like using a slow blow fuse. The fuse and breaker will allow for a large in rush current like starting without tripping.
