Default cooling and issues with oil coolers in cold temps

Im planning on doing a couple HPDE's and autox's so I want to make sure I ahve proper cooling for my setup. I've heard however that people have had issues with oil coolers when temps get cold. My understanding is that this may be avoidable by using a thermostat. Here is what I'm thinking for parts. Would love to get your suggestion. Also, am I better off having some of this just installed in the warm weather months?

Radiator -Koyo or Masumoto
Oil Cooler - Masumoto
Thermastat - TBD
Venter Hood - Custom
Baffled Oil Pan - TBD
Radiator Breathing Tank - Greedy
Thermal Wrap HPC on downpipe, manifold, and turbine - HPC sent out through Full Race
radiator cooling plate - TBD
