Default gauges\ sensors

I will be running an SOS stage 2 kit around 12-14psi with AEM EMS and I am wondering what gauges I should buy. Oil temp, fuel pressure, boost , etc..... I am not sure what I really need..

As many as you can afford.

AFR as a minimum.

But if you had to break it down to the 3 essential ones...AFR, oil temp and boost IMO

3? Wideband, boost, oil temp or oil pressure.

I have the funds to get as many as I need but I don't want a lot of clutter or something I really do not need.

AFR is a MUST - #1 warning sign before you blow some sh*t up
BOOST - Perfect to show any possible belt slip, leaks, etc, tied in for a close second
Oil PRESSURE - your SC is spinning pretty darn fast, i wouldnt want a drop in oil pressure to cause my blower to slice grind its self apart. ^tied with the boost

Optional-
Oil temp- not too much of a necessity with a SC as they dont get within a mile of the heat that a turbo gets, not much of a necessity
water temp- also not too much of a necessity, but its useful too

Unless he is opting for the self lubed blower, the wideband & boost should be enough

Or an AEM serial gauge...
