Default suddenly over heating

hi guys
so my car is suddenly overheating only when i'm driving, it will go over 3 bars and then 4 and then 5, even the weather outside is about 32F
and if i stop driving and let it run, it will go back to 3 bars

the fans work when it's hot and stop when it cools down,
i bleed the system and changed the water with a new antifreeze and same thing
the hose on the top gets hot, but i couldn't check the one on the bottom coz i can't reach it

the car has a novi 1000 with a front intercooler
i ran the car for a few months without a filter on the supercharger and everything was ok, i just got a new filter and put it on about 2 weeks ago ( i don't know if that has anything to do with the overheating )

i drove the car in the summer when the weather was too hot and nothing happened.

any ideas ??

how do i make sure it's the Thermostat ??

and if it is the Thermostat
do you guys recommend aftermarket Thermostat ?
i was thinking of getting the Spoon Thermostat, or should i stay with OEM ?
i have a Koyorad radiator too.

My guess is that there is an air bubble within your cooling system or your thermostat may be bad. It goes up to 4-5 bars because it's not circulating through the system due to the thermostat not being able to open if there's a big enough air bubble. You turn off the car and either the coolant cools down a bit or it gets passed the air bubble, finally opening the thermostat (bubble is still a problem and can still block thermostat)

My suggestion would be to try bleeding the cooling system using billman's method. If the problem persists, move onto thermostat.

oh i don't turn off the car to cools down, when i stop driving and the car is still running on idle it cools down,

Use an airlift to bleed the system completely. If your lower hose is not heating up then likely the thermostat is stuck shut. If you fix these and still have an issue then you may have headgasket issues.

I don't have a link to it but if you search on google for "Billman bleeding guide" or something along those lines I'm sure you could find it rather easily.
Ah then that leads me to believe that you have an air bubble within your system. Have you recently done a coolant flush or have you noticed any coolant where you park?
