Turbo needs (mooww powah bebeehhhh)
Man, nobody can properly respond to this, there's just too much detail left out on your list of parts. Also, the various brands you have already gone with or planning to go with is concerning. Usually hotside parts are not compatible between different companies' products as the design of the manifold, downpipe, and intercooler pipings are all different. You don't even list the brand or specs of the main part, the manifold. What turbo outlet size and wastegate size is your manifold? What spec is your turbo? Either do more research or just save up and buy a full kit. Piecing together a custom kit requires a very good understanding and will always require custom fab work. Even full kits seldom require custom fab work.
You should look into a P tunning turbo kit
I would look into ID 1000's or higher for pump and ID 1300 or higher for E85 depending if you want to run E85 or pump
You will also want to get a fuel pump to meet your goals; upgrade the return lines if needed also larger fuel fuse with larger pump kits. There is alot of research depending on goals.
ECU will be up to your tuner I would pick one your can remote or do in person
Do some reading on the facebook boosted s2000 group

I don't want to sound like a pedant but you haven't done enough research if you ARE asking some of these questions. I pieced my turbo kit together and it was a lot more work and effort (and eventually money) than just buying a kit that actually works well together.
If I could do it over again I would have absolutely gone with PTuning or similar. I'll try and break some of it down though
What size frame and wheels? What is your power goal? What are you going to primarily be using the car for?
are you fabbing up mounts yourself and do you know if it'll fit? Why not get an entire coldside kit?
TS bov
If you're getting the divided PLM T3 (Based on you getting the downpipe) you'll need to get 2 wastegates, and then verify you're getting a turbo that is actually twinscroll to utilize that effort. I originally had a PLM and I had to delete my AC and relocate my fusebox to get it to fit, but YMMV.
What size? Are you going E85? Coincides with HP goals

See manifold
This is based off the PLM manifold I'm assuming
I'm confused on this one. Cold side piping? Why not kit the intercooler together with it
Find a tuner first before you decide the ECU.
And i also wanted to get thoughts on
these parts down below
A sandwich plate is fine for feeding oil. A lot of people tap into VTEC oil pressure switch
You need a different tuner if they tell you otherwise.
Read above.
Coolant lines if you're running a ball bearing turbo, drain and feed for you turbo, location for your drain, how are you managing boost or if you're just going of wastegate pressure, how you're routing wastegate and bov lines, what clutch are you going with, etc.

AEM ecu
And i also wanted to get thoughts on
these parts down below
San-which plate (opinions would it work for oil circulation )
AEM air/fuel gauge (do i need it )
AEM boost/fuel pressure gauge (do i need it)
WHAT AM I MISSING AS FOR AS PARTS , HOSES, SENSORS ETC,
