Now that it's winter and I have the top up all the time, I can't smell the exhaust at all.
With the top down you can, but not bad at all.

When the signal turns suddenly red and you need to slow down quickly, than the gases go into the cabin a bit. But in general, nothing to worry about, 99% of the time you don't know the cat is gone. But people with top downs driving behind you will notice it he he

Im running an open dump tube off my turbo setup. Is the smell of the test pipe the same that I smell from that? Just raw exhaust?

Yes, all catless cars have this smell.
