Italian tan leather with tan suede inserts. The color is actually called maple. It's about a 90%-95% match to Honda's "tan". Sometimes when I look at the Honda center console leather it looks more yellow than tan. The same with the door inserts except for the perforated portion of the door card. The perforated section is about a 98% match to the seats.
The seats were professionally done about 45 minutes from my home. With the some of the excess leather material, left over, I did the shift boot myself.

I'm glad it's done but it wasn't cheap. Cheaper than buying new racing seats though.
Very nice job on the seats

Those look brilliant!

I've never been a fan of tan interiors but it looks like the work was done really well! Would you mind saying around how much it cost? Considering doing something like this myself.

Best is always subjective. If you're looking for easy and relatively inexpensive they're a very good option. If your priorities differ (the Clazzios are good for seat covers but even so I don't care for how they look -- YMMV as with any subjective matter) then reupholstering may be a better option. Don't just assume that your preferences are universal.

The cost is going to vary given your proximity to a top notch upholsterer. I have seen other posts on the forum state that a good job requires good money. That said, budget around $700-$800 per seat. That's material and labour. The labour being the majority of the price. Some people might thinks that's nuts, to pay that much but if it's custom you want then it's worth it.
If you have an industrial sewing machine for straight stitching and the know how you can do the job yourself. That's what I was intending to do but I would have had to purchased an industrial machine. Our existing sewing machine just isn't powerful enough to complete a job like this and this type of job can be extremely frustrating as well.
Remember our OEM seats are manufactured by Recaro, one of the best seat manufacturers in the business. Pay the price to have it done right and you will be extremely satisifed.
