I don't know anyone using 5.1; the wet/dry boiling point of high performance dot 4 fluids (motul RBF 600, 660; endless; project mu; stoptech 600; brembo; castrol LCF; torque RT700; maxima racing, etc etc) are all higher than every 5.1 I am aware of.

The clutch fluid does not get hot enough to warrant the use of even high performance dot 4s mentioned above, definitely overkill. For the clutch, you will want a long lasting fluid as opposed to an ultra high wet/dry boiling point.

what are you trying to solve exactly with the 5.1?

I will use it (DOT 5.1) on my Yamaha FZ-09 bike as Gulf recommand it to me to have a better and more precise brake feel and feedback.

From what i read, DOT 5.1 was thinner and give a better feedback, the reason it was used on abs brakes system to help the abs pump to react quickly and i dont know if it can give a better brake & clutch feel on the S2KI, i've always run with Wilwood 570 & i have braided brake lines, im very happy with my set-up, simply search to upgrade a little bit!

Got this in the clutch,just absorbs water much quicker so needs more frequent changes they say.
<not a problem for me,has great clutch now,No crunching cold or hot>
its been in 9months and still fine.
When its dirty i will change it..

I would be wary of using it in brakes. ABS was calibrated using DOT 4. The use of 5.1 may cause issues.
