I voted oil temp. it's the only thing not being monitored. Oil pressure is being monitored (albeit poorly)... you can grab the other data from ODBii readers.

I just picked up a Bluetooth OBDII reader and paired it with Torque (app for android).. It's glorious. $28 total.

I do track the car and i feel that oil pressure would be a great choice.

Not a oil pressure gauge but a oil pressure light. Come on, how often do you/or can you look at a gauge in a high speed corner or passing a car or ever when on the track. I'll bet not to often and not when you need to know that you have oil pressure. A light up on top of the dash that you can adjust to come on at any pressure is what you want.

Any loss of oil pressure at high rpm's or under high load is BAD. If I tracked my S I would put a adjustable oil pressure light switch on my car. Something like this

Put a on/off switch on the ground wire so you could shut it off on the street, put a bright led light up on top of the dash so you would see it even if your not looking at it. Set it to turn the light on at around 45 to 50 LBS so the only time it would be on would be in low rpm situations or idle. If the light came on during a long sweeping turn you could take the load off of the engine before you kill a bearing.
We had one on our drag engine and it never turned on the light at anything over idle(45 lbs) and never going down the track. But I had it so I could try to save my engine incase I did lose oil pressure.

Innovate has a 2 in 1 gauge. Oil temp and oil pressure I believe. Though, I think only oil pressure gets a numerical value while temp gets a bar much like the coolant gauge on your dash.

I have a 2 gauge pod. PLX AFR in one opening and a PLX multi gauge with OBD2 and oil temp in the other. When on track I have oil temp and water temp (OBD2) displayed on the multi gauge.
