Piston install @ 55k miles

Topic says it all, I want to install the JDM pistons in my car and a spoon head gasket but will I need to hone the cylinder walls first? The car has 55k miles on it currently.

Yes. The cylinder walls will need to be honed, so the rings can properly set.
