The last part of your post is also true. That is a big risk I did not even think of. I have a lot of confidence in this shop though. They have done many brake line tucks, abs deletes, and wire tucking.

Up until fairly recently, you could take off the ABS module and drive a car without ABS (pending driver skill) and be as fast if not faster than the car with ABS.
Most modern cars' ABS systems are so reliant on the ABS system that they are virtually undriveable without ABS. BMWs are a prime example. With rotor, caliper/piston, and static brake bias designed to optimize the ABS system, removing the ABS system often leads to a car with far too much rear bias, and extremely hard to modulate. Short of dropping the entire system and going to a twin master and brake rotor and piston sizing designed for the car in a non-ABS application, it is often better to just leave the ABS on.
The S2000 has a very good ABS system IMO. Just keep it.
