To answer your question, yes, auto parts store rotors are just fine. Just get blanks. I just bought some new track rotors for mine from Advanced Autoparts, and I noticed the rotors are actually made by Raybestos. It's the same story with all the auto parts stores, can't go wrong with them. Just don't fall for buying the "premium" product or anything, just get the most basic blank they offer and you'll be all set 
Didn't know there was a streets of willow day the 24th. Hmmm maybe ill go. If I do stop by and say hi, ill be in a sebring silver ap1 under a red and white EZ up lol.
In terms of your brakes, I think the PMU pads and fresh fluids will be plenty to get you going safely. Remember, you don't have to kill the car when you are starting out, but rather focus on rhythm and your lines like rohde mentioned. Also keep an eye on your oil levels before/during the track day.
