Lower Center of Gravity = better (within reason of suspension geometry constraints), but 4" should still be more than acceptable. Your ride height will most likely be fine.

It should be easy enough to get around 2800 with that setup did you weigh it?
I have the HD bar with gutted rear and softtop it was 2820lbs at Roebling with half a tank and 190lbs of me.
the airbag stuff out thats an easy 10lbs+
lightweight battery is an easy 10lbs+
