if you decide to use your phone, i would suggest getting a 10hz external gps unit. This will give more accurate gps data logs.

It can but wont have colors. It will show +/- time differential off your best time and give you a predictive current lap. I've been using my solo for about 4-5 years now. My only regret is its a non-DL. Wish i had the DL to wire into my Haltech for more data in one spot instead of two.

Solo DL on the haltech via CAN cable. Made a preset view that shows predictive lap, last lap, and best lap that session. I'll eventually get a Smartycam HD because it make data overlay automatic.

Water temp is already built in from be factory sensor. You can add inputs for oil pressure and temp and also setup safety parameters to shut the motor down.

Realistically, wiring up CANBUS from any other standalone shouldnt differ too much.

+100 for AiM Solo I'd recommend the DL but that's just me. It's better to have the extra capability and not need it then want it later and have to spend the money over again.
