Do you pull the ebrake up to hold it while slipping the clutch a bit? And then just let everything go at the same time?

Yes but only when you are about to go. Don't slip until the last moments to prevent excessive slippage.

Do you bring the revs up at the last moments too, or just hold them up while waiting? And do you go for a good bit of wheelspin rather than catching traction right away to keep the revs higher/closer to the powerband, and reduce stress on drivetrain from 'catching/bogging' right at launch?

Try to get a little bit of wheelspin, maybe a little chirp, but don't go to town with it.
