Maintenance after track days?
mainly, bleed brake fluid. And swap out the track pads for street pads and rotors if you have extra, track tires for street tires. That's about it. Depending on your oil change interval, you might want to change your oil if it's been over 2000 street miles + track miles. Alignment isn't a big deal unless you hit something, only have it rechecked before your next event. That's about it. Not much to do.
At the track during long track days or at home afterwords:
Check brake pad wear (if not swapping)
Check weel torque (if not swapping)
Check oil level
Check tire wear
Bleed brakes if at all spongy
Clean rubber goo off paintwork

If you use brake pads with corrosive dust (PFC 97s for instance) it's a good idea to get your wheels cleaned up and the car washed ASAP. Also the time to inspect brakes and suspension mounts and pieces for anything abnormal. Last but not least, it's smart to check through your sig, and make sure any big photos that take up half people's screen haven't snuck in there.
