Race Camera
Keep in mind that if you're recording in 1080p, you're going to get huge files very, very quickly. This requires (i) large cards for the camera, and (ii) lots of hard drive space somewhere if you're going to save the files.
I record at 720p, and am quite happy with it. The video quality is acceptable, and the files are still huge (several gb for a 30-minute race).

The GoProHD is configurable between wide-angle and standard view. It accepts 32gb memory cards. In a kart enduro last week I was able to grab 2 hours of continuous footage. The audio turns out excellent as well, even when exposed to the airstream. All my previous setup I had to use a remote powered microphone to get anything resembling clean audio. Of the last ten video cameras I've used in competition environments, this offers the best overall package. I had a Contour HD for a few weeks, but returned it because the video quality sucked in comparison. At $300 the Go Pro HD is an absolute bargain.
I picked one up also. I love it. Does great for auto-x.
^ CS3 on XP didn't support MP4, nor did the old Windows Movie Maker. You had to convert to .avi first which was a PITA. I upgraded to Windows 7 and the codecs have been updated so Movie Maker now works fine. Crappy, but functional.
How do you guys do the picture in picture video? I have been having a hard time keeping my runs clean lately. I cannot tell when and where i am hitting cones, so i must be barely hitting them. I would lke to start to video my runs with the primary view being forward facing and the PIP being rear facing to see where i am coning and what the input looked like just prior to hitting them. Thanks
Pinnacle Studio is an inexpensive option and should be sufficient for 99% of anything you need to do video wise.

Adobe Premier or Avid would be the next step up.
