Do you want the Fast and Furious definition or the real definition??

The real definition:

Double clutching is a shifting technique used in older vehicles in which the transmission is not syncronized. It involves disengaging the clutch, shifting from the currrent gear to neutral, releasing clutch, then revving the engine to the appropriate RPM to match the vehicle speed and desired gear, and finally depressing the clutch and selecting the desired gear then releasing the clutch again, obviously.

Newer transmissions have sets of syncronizer sliders and blocker rings. As you shift from gear to gear, say 1st to 2nd, the slider pushes against the brass blocker ring, which equalizes the speed between the slider and the selcted gear, allowing the dog teeth to engage, and power to be applied through the new gear.

It's fairly simple actually, there's no need to double clutch, unless of course you're Vid Diesel driving a veilside FD.
