OK, you're driving along at a constant speed, and a Mustang or hotted-up Civic comes alongside. He maintains your pace. What is the standard procedure for responding to this (I think) challenge?

Nahhh.... just let them be.. unless they drop a gear on you.. (just be ready.. I usually drop a gear before they even line up) or revved at you... but it's not worth getting a ticket. I always look around for cops first before I gun it. (usually, when I see a potential race coming up, I look for any sign of a CHP.. so if I gun it, there would be no one to give me a ticket) WATCH YOUR BACK!! If you dont feel comfortable.. DONT. chances are.. your feelings are right!

Sometimes I bite sometimes I don't, it usually takes one stab of the throttle to have windows dropping and me having to answer a slew of questions, while we're both trying to keep in our respective lanes.
