Problem here is that while the cop may have exaggerated your speed (not typical behavior btw) your EMS recording proves that you were, in fact, speeding (albeit at 'only' 7mph over the limit). In any case, you were speeding and therefore breaking the law. If you chose to take this to court the best you can hope for is reduction of the fine but it will still be a speeding ticket.
At least in Cali, police vehicles have to go through testing (for which they have written records of course) that their speedometer indicated speeds are very accurate... so they can write tickets by pacing you. OTOH, if you present evidence from your EMS of your speed, the burden of proof is on you that this speed is accurate.

I do not have an issue admitting to speeding (62 mph). The data produced from the EMS in my S has been verified (dyno, emissions, ect.). It just irritates me that I was singled out and cited for an incorrect speed.
I'm sure at one point the cop was doing 70+ to arrive at the location I was at. That was the point at which I was being "paced".

Yep, that sucks. Rather than pay your ticket you have two options that I would consider. The first is make them show proof that the cars speedometer had been calibrated recently. If it hasn't there is enough doubt in regards to the accuracy of his pacing that they will drop it, if it had been calibrated recently you are screwed.
If you go the above route it will be much more difficult to go this route. Go to your court date, ask to talk to the solicitor, tell them that this is very unusual for you to speed, you are sorry, you are willing to pay the fine, all you ask is that it is not reported to your insurance. Granted you don't have 4 or more tickets they will grant this to you. You still have to pay the fine but you won't pay out the wazoo on insurance.

Well don't feel too bad, my GF was pulled over by a Cop who was speeding on opposite side of the freeway and then all of a sudden he turns around and goes after her!
Another one is when my friend traveling thru texas was pulled over by a cop sitting in his car and pulled him over. My friend asked him to show proof and he said you looked like you were speeding, and he stated that he's "got and eye for these things".?????
