I have a set of spoon calipers that I want to install on my S2000 and I have
17" Volks TE-37 on my car. Do I need wheel spacers? If I do, what mm do I need?

I know that the stock wheels are 16 x 6.5 and the offset is +55mm. I was told that 15mm spacer is needed.

My Volk TE-37 is 17 x 7.5 (Front) and the offeset I believe is +48mm. Can someone help me do the calculation or anyone know if I need spacer or not?

not sure if you'll need spacers or not, maybe someone else can chime in. however, anything larger than a 5mm spacer WILL REQUIRE larger lug bolts.

Yup if won't fit on the TE-37s without spacers. 15mm sounds about right considering the Spoon rims are +35mm in the front. Like Scatten said you will need longer studs.
