Sore subject, but this is what $1k got me in Sept '02. The custom leather has held up flawlessly, while the bolsters were starting to show cracks/creases at about 40k miles(53k miles on them at time of theft ). Factory leather is coated to reduce the consumer's need to condition it as often. The problem is that it is not good for the leather, and eventually cracks. The leather I had put in was cleaned and conditioned on a regular basis, about 3 conditions to 2 cleanings. The gray also helped during the summertime when the car was parked, top down.

Unless you plan on selling your car soon or getting new seats in a couple of years, go custom... even if it's in stock colors. Just my opinion.
