Take a driving course. It will help immensely. One of the very first things they teach you is to anticipate, not react. It takes about a half second for you to figure out that you have corrected the skid, and by the time you correct, the car is swinging the other way. I have always wondered why this happens (on any car), but now it has been explained. Watch a good drifter/driver/racer etc. They are always making minute corrections at the wheel in anticipation of what the car will do next.
To elaborate on Bieg's point, turning while going up/downhill also reduces your cornering abiliy, even ignoring weight transfer. The reason is because you spend part of your traction budget just gripping the hill. A corner you could take at 45mph on level ground will require a slower speed at an angle. I've really noticed this now that I live in the hills in Austin, TX vs the relatively flat roads in the D/FW metroplex where I lived before.
