I have pretty much made up my mind that this is the best course of action to find one asap and sit in it, and feel how uncomfortable I probably am going to be.
Once this is done then I will try and sit in one every month till it feels good then buy one

Motivation is one important key to your goal. Glad you found yours.
Keep in mind aftermarket seats. You can fit seats with different bolsters if necessary (or even just the driver seat). So when you test sit, you should be less concerned about how you fit the seat, and more with how you fit the rest of the car (room to close door and make the moves involved with driving, etc.)
As for knees, unlike many sports cars, the S2K windshield surround is rated as a rollbar. So you can use it as a grab rail to help lower and raise yourself for entry/egress.

Small update, down to 322lbs now (50lbs in total so far) still not had a chance to sit in a S2k as theirs none for sale within a 50mile radius of my house at the moment.
However, I did drive my mates 2003 Z4 yesterday, I fitted in it was reasonably comfy, could of done with adjusting the seat a bit more etc but it was okay, I fitted.
Has anyone driven a Z4 and can compare the ammount of cabin space to an s2k?

I think you would regret buying the s2000. First time you try to get into the glove box while in drivers seat you will want to sell it not to mention getting in and out of the car. All around bad idea.
I'm 185-190 and am pissed every time I try to get something out of the glovebox while seated. Who thought of putting the box there is imo a fail. I would say 200 lbs is max and that will be cramped. This car is built for 130 lb 5'4" Small people imo. I feel like its just not right in comfort at 6' 1" 185#.
Get something that is better for your needs.
Good work on weight loss! I just feel you should be rewarded for your effort in enjoying your new car. There are plenty of other choices that will make you just as happy. Convertible Ford Mustang comes to mind so many choices.

I am 5'10" and used to weigh 230lbs. I fit well then, but have been motivated to lose weight and this morning weighed in at 175 lbs. At my new weight, I feel like the car was designed for me.
for working on your weight. It is a lifelong thing, but believe me, it is worth it. The S2000 is a great reward for you when you get there. Don't get discouraged.
I don't think there are too many Mustang convertibles in the UK. Rather bulky for their roads.
Personally, the inability to get things in/out of glovebox would not be a showstopper for a car with this many attributes (for OP, glovebox is on the back wall between the seats).
The ingress/egress hassle, I try to compare that to my bike. The jacket, the helmet, stowing my stuff, etc. Folding up to get in and out is actually less hassle than that.

OP, congrats on the continuing weight loss and the desire to get to the dual goal of a target weight and an S2000 (both winner bets)

I'm 6-1 about 260 and my fat ass never had any issues my S2K - glovebox and all.
I do need to drop some fat however...
^The issues i have are left arm rest too low, Glove box location but this could be problem for anyone, Seat too high, No steering wheel adjustment too far away when seat is back. All of this I can live with and do. Will get seat lowerd some day.
I just think for op he might want to look at other options.
