Depends on your objective. Do you want to pick up conversations? Do you want clear and crisp sound? Or can you live with wind noise - or the alternative, no noise. On the S, I've mounted outside the car near the side view mirror; I've also mounted on the windshield; I've also mounted using the modifrey mount, looking in each direction, front (like looking out of a cave) and rear. I've seen mounted in the front grill area. I mostly use an inexpensive omni-direction, lavalier lapel mic for remote sound (about $20), not so much to pick up conversation, but rather to defeat the wind noise. If the car is top down, you will be overpowered by wind noise. I just throw the mic under the seat.
Here's a video I did recently, no remote mike, closed windows. My wife is on the microphone side of the camera and she can be heard. I can't. Dash mount, mostly slow speed, old car so the vintage resonance (a/k/a rattles and buzzes) are apparent. Go Pro Silver, so maybe 5 years old.

I attached my old GoPro camera to the wind deflector by way of some velcro. I have the camera inside of a clear plastic weatherproof case (an accessory that was purchased with the camera or came with it, I don't recall). I mounted one portion of the velcro to the inside of the wind deflector and the other portion the the backside of the protective case. The case also has an opening on the side that allows me to connect and external microphone. I have a lapel microphone made by Sony that is likely very similar to the one that @blueosprey90 mentioned. The microphone connects to the camera and I just sit it somewhere between the two seats. The mic ultimately gets wrapped in a windscreen (the furry looking things).
This solution was pretty economical and I can easily remove the camera from the car to take it with me when leaving the car parked. This is clearly not the most exciting S2000 video, but it will at least give you a good sense for how this all works.
