The Great Dilema

Ok please no bashing of my soon to be fiancee.
!! I have been married for almost 4 years and with my wife for almost 10 years and I have had whatever car I have wanted for all of those years. Cars are my thing and she respects that. I honestly think it makes our relationship better because I find my outlet in my car. If you have to get rid of it, I would personally go with an STI, 335 xi, or a Legacy GT. I think I could find an outlet in any of those three cars. A Legacy GT is the most economical/practical IMO, besides you can modify those to be damn fast.

Selling the S2000 is the least of your problems.

First off, I'd make sure she has a comfy car so your balls can travel in comfort with her wherever she takes them.

Seriously though, I can't take your "I want to be financially secure" claim seriously while you have an S4 at the top of your list of cars to buy. That is an extravagant car by any stretch of the imagination.
Honestly, if you're still in school and already thinking about getting married, taking on a house, kids, etc. etc.... my advice to you is to hunker down with as cheap and reliable a car as you can possibly get. Life is about to get really expensive, and saving is your friend, not spending.
See where I'm going with this?
I don't understand why she wants you to sell the S2000 when it is the Del Sol that is on its last legs. You have two impractical cars, and I can understand that she wants you to have at least one practical car. But you're already getting ready to replace the daily driver Del Sol. If you replace it with a practical daily driver, what can she have to complain about?
You're arguments make no sense. You can't own an s2k and a $10k sedan but you can afford an S4? You won't be doing yourself any favors buying the cheapest S4 you can find.
Reasonable choice: keep your S2k stock, sell of the parts you have accumulated. Sell the Del Sol and buy a civic/accord/whatever.
Intelligent choice: if money is tight sell both cars and buy a decent, reliable car: civic/accord/acura/etc
Guys who do everything their gf/wife tells them to do are part of the downfall of modern society.

I really just wanted advice about what to do with my possibly parting my car out and what car to buy. But since all everybody is going to talk about is bashing my girlfriend I will just close this thread. I do not do everything my girlfriend says. I don't buy her stuff and she doesn't ask for me to buy her anything. The only thing that she really asks is that I make good financial decisions for our future.
I don't understand how talking about marriage, a house, and kids while being a senior in college is a bad thing.
Nobody knows my girlfriend or our relationship.
Also someone already stated how you can find an 03-05 S4 for around $20k. Which is what I would have with selling my car and selling all the parts that I have.
