how do you pronounce Mugen?

Actually Mugen is the pronounciation of Japanese Kanji (characters from Chinese) 無限 which means unlimited and infinity.
The right pronounciation should be Moo-->無 Gen-->限. The G sounds like we say the G for Good, not the G for Gene.
It's funny, just like most people pronounce Honda wrong. The word Honda also comes from 2 Japanese Kanji, which are 本田. 本 sounds the same as the word Hone, not Hon.
